This QA Level 2 Award in Food Safety in Catering (RQF) is a regulated and nationally recognised qualification for people working, or planning to work, in the food catering industry. The qualification is also ideal for those who come into contact with food handling areas due to the nature of their work, such as pest control officers and delivery personnel.

Course aims of the Level 2 Award in Food Safety in Catering:
The Food Safety in Catering Level 2 award qualification is specifically aimed to give delegates a firm understanding of the principles of food safety in any catering environment. The course also covers elements of food borne illness, food poisoning, how to reduce the risk of food contamination, hazard and HACCP. Delegates will also be able to understand the principles of a documented food safety management system and the relationship between hazard and risk.

Course Content:
This course will provide your business with all the tools you need in order to set up a food safety management system and maintain high levels of food hygiene within your establishment. Course content includes the following:

  • The importance of food safety
  • Food safety laws
  • Legal responsibilities of food handlers
  • Types of contamination and the associated risks
  • Bacteriology
  • An introduction to Hazard Analysis and Critical Control Points (HACCP)
  • Personal hygiene
  • Work flow, work surfaces and equipment
  • Cleaning and disinfection
  • Waste disposal
  • Pest control
  • Safe food handling practices including time and temperature controls
  • Cooking & reheating
  • Chilling
  • Cooling
  • Freezing
  • Thawing
  • Hot holding
  • Stock control procedures

Certification and Assessment:
Delegates will be required to complete a multiple choice exam at the end of the course. On successfully completing the course delegates will be awarded a Qualsafe QA Level 2 Award in Food Safety in Catering Certificate which is valid for 3 years.

This Food Safety in Catering Level 2 award is Ofqual regulated and the qualification is awarded by the awarding body of Qualsafe.
